Galette Recipe to accompany video 

Galette Dough

2 cups all purpose flour
1T sugar
1⁄2t salt
8 oz unsalted butter
1⁄2 cup cold water plus 2 T more if needed

By hand:

·       Mix the flour with the sugar and the salt

·       Press the butter into the flour, breaking it up into large pieces. Mix in this way until the butter is well coated in flour, a little bit more than for pie dough.

·       Add the cold water and mix gently with a pastry scraper.

·       Gather the dough into a rough ball. Flatten it again. Do this several times - not kneading or overworking - until the dough comes together.

·       It should not be well mixed, but it will adhere when formed into a ball.

·       Wrap tightly in plastic and chill at least 20 minutes before using - overnight if possible.

·       This recipe makes enough dough for two large galettes or six small galettes.

Ingredients

Apple Galette Filling

6 apples (approx. 10 cups peeled and sliced) 4 T organic sugar or 3 1⁄2 t local honey1⁄2 t fresh lemon juice1⁄2 t all-purpose flour

Ground cinnamon or cardamom to taste (Optional)

To make the filling:

·       Toss all ingredients together until sugar starts to dissolve.

·       Set aside until ready to assemble into galettes.

Assembling the Galette(s)

Instructions:

·       Cut the dough in half for two large galettes or into sixths for small galettes and roll it out to a thin circle approximately 1/8 inch thick.

·       Brush it lightly with an egg wash of whole milk and egg white.

·       Pile the fruit mixture into the center of the circle and wrap the dough lightly around the fruit, gathering up about two inches from the outside and pulling it to the center. You should have a nice package with a hole, exposing the fruit in the center.

·       Gently brush the outside with a little more of the egg wash and transfer to a sheet pan lined with silpat, waxed paper, or parchment paper.

·       Chill it thoroughly. This will help it to keep its shape while baking.

·       Preheat the oven to 400 degrees. Bake in the lower third of the oven for approximately 40 to 50 minutes (30 to 40 minutes for small galettes) until crisp and well browned. You may have to turn your oven down to 375 degrees if it is browning too quickly for the filling to cook properly.

·       Wait until it is completely cool to transfer to a platter.

·       Serve and enjoy!
